What Is a Smash Burger? The Crispy-Edged Burger Taking Over Jaco

A smash burger starts as a ball of ground beef. It hits a very hot griddle and gets pressed flat — hard — with a heavy spatula. That's it. No thick patty, no slow cooking.

Why smash?

Pressing the beef thin against hot metal maximizes contact with the griddle. The surface browns fast and deeply (the Maillard reaction), creating a dark, savory crust and crispy, lacy edges, while the thin patty cooks in a couple of minutes and stays juicy.
